Feeling international today!

I've been craving curry all week. Today, I decided to quench that craving so I made Shrimp Biryani. Biryani is a rice dish that comes from the Indian subcontinent and originated in India, Pakistan, Iraq, Iran, and Afghanistan. I used lots of great spices including hot paprika, Madras curry powder, garam masala, plus some fresh garlic, ginger, and onions.


The best part? I made the ENTIRE recipe in the Instant Pot. It literally takes 3 minutes of pressure cooking and it's done! Prior to pressure cooking, I used the sauté feature to partially cook the shrimp in butter, then I removed them and sautéed the onions, added the other spices, rice, some water, and set the pressure to high for 3 minutes. Once done, I carefully released the steam, added the shrimp back and turned back on the sauté feature to finish cooking them. Once done, I topped with fresh yogurt which I mixed with fresh mint and cilantro.


Craving satisfied! And the house still smells like curry!

Now on to start prepping dinner! Doing a pre-St. Patrick's Day dinner tonight....first up, making a fresh loaf of Irish soda bread. More later!
