Feeling the Fall!


The weather is finally changing and the "Fall" feel in the air made me crave something to fit the season, so I made my new Autumn Grilled Cheese and it did not disappoint! The best parts were that I had all of the ingredients in the house already and I was able to make the entire dish in one pan.


I started by crisping strips of bacon and sautéing half of a thinly sliced sweet onion.

Once I removed the bacon to a paper towel to drain, I finished the onions by adding salt, pepper, a splash of balsamic vinegar, and a few teaspoons of brown sugar. Once the onions were soft and golden, I removed them from the pan.

After that, it was time to assemble the grilled cheese sandwiches. I melted butter in the same pan that was already flavored with the onions and the bacon grease. (Good start, right?)

I started with the whole wheat bread which I slathered with a mayonnaise-Dijon mustard mixture....

...cheddar cheese....

...crispy bacon...

...onions...

...sliced apples...(I used Granny Smith)

...provolone cheese...

...and the top which I also slathered with the mayonnaise-Dijon mixture....

Three minutes later and lunch was ready!

Any good grilled cheese deserves a hot bowl of soup, especially on a cool day so I served the sandwiches with homemade Beef Barley Soup which I had leftover from Yom Kippur dinner earlier this week. Perfect pairing!
