Quick and TASTY lunch!

As I have said many times, good and delicious food does not have to be time consuming or difficult! I recently proved that again with my "PPP" (Pecan Pesto Parmesan) Spaghetti with Bacon and Runny Egg!

Not only quick and easy, but a beautiful dish too!

I started by cooking eight slices of chopped bacon while I made the pesto which included toasted pecans, basil, parsley, lemon zest, garlic, Parmesan cheese, salt, and pepper.


Once it was chopped, I drizzled in extra virgin olive oil while the food processor was running until it reached the perfect consistency.


While I was making the pesto, the spaghetti was boiling away. (I cooked it according to the package directions.) After that, all I needed to do was toss the spaghetti with the pesto and bacon, add more Parmesan, and top with the runny egg.

Less than fifteen minutes start to finish!


We definitely needed garlic bread sticks to accompany the spaghetti. I used store-bought bread sticks but doctored them up with garlic herb butter and more parmesan cheese.
