I recently saw a video floating around social media and had to try it for myself. I mean, who would say no to a Bacon and Grilled Cheese Omelet? I will share with you how I made it.
I melted two tablespoons of butter in a non-stick skillet while I beat three eggs with a splash of milk, chopped scallions, salt, and pepper. I poured the eggs into the skillet.
The next step was to quickly dip two slices of bread and immediately flip them so that both sides were coated with the egg mixture, much like French toast but before the omelet had set.
Once the bottom was set, I carefully flipped the entire omelet, added cheddar cheese to one slice of bread, and shredded mozzarella cheese to the other.
I added several strips of crispy bacon to once slice of bread and then folded over the two outside edges of the omelet as shown below.
After that, I simply flipped one slice of bread over the other to form the sandwich and cooked until both sides were golden brown, several minutes per side.
As Ina would say, how easy it that? Perfect breakfast! Filling and comforting.
Serve with a mixed green salad and brunch is ready!
*Side note - this recipe can be made with gluten free bread and dairy free cheese!
