Snow Day!!!

This was quite the week for weather in Maryland! Teachers and students in my school district enjoyed a snow day on Monday and Tuesday, a late opening on Wednesday, and and then another snow day on Friday. These 1 full-day work weeks are exhausting!


With more winter weather predicted on Sunday, I thought that this weekend might be a good time to test some new recipes. Sometimes I follow others' recipes exactly, sometimes I add my own spin on them, and other times I write/create/dream my own. (Yes, I sometimes dream up recipes in my sleep!)


Yesterday, I tested a new chili recipe. I can't share details about it because it may be entered in an upcoming chili cook-off and I don't want to give anything away, but I'll be sure to share the results! It's quite unique in many ways!


Update - The chili is a HIT. I'm going to tweak the recipe a bit and then I think it might be ready for the cook-off!


This morning, I tried to improve an old classic - Egg in the Hole. I have made EITH numerous times and while it's always satisfying, it's also kinda boring - a hole cut out of the center of a piece of bread, in a sauté pan with butter, and a fresh egg cracked into the hole.


I recently saw one of my favorite Food Network personalities make an Egg in the Hole BLT which sounded way more of an exciting version. I still wanted to try and make it even better so I had 3 ideas -

  1. How about adding fried bologna?

  2. How about using garlic herb butter in the pan instead of plain butter?

  3. I love mayo on my BLT and I love Sriracha on my eggs - so how about a Sriracha mayo for the bread?

And thus, the Fried-Bologna-Egg-In-The-Hole-BLT has been born! When you cut it in half, the yolk oozes and runs out creating an ooey-gooey fork-and-knife sandwich experience!
