Sometimes nothing beats a good Jewish breakfast!

Some weekends I make fancy breakfast, but this weekend I felt like making a simple Jewish breakfast - LEO - Lox, Eggs and Onions along with some good bagels and cream cheese. Simplicity can be just as fulfilling!


To make, I simply sautéed some onions in butter and once softened (but not browned), I added the lox and cooked for a few more minutes before adding 9 eggs which I beat with some half & half, black pepper, dried dill, and a pinch of salt (the lox is salty on it's own). I garnished with some parsley, and a drizzle of kewpie mayo and Sriracha for a little extra flavor and heat. I served with some asiago bagels, assorted cream cheese, some sweet cherry tomatoes, and thinly sliced onions.
