I LOVE Swedish Meatballs so why not make it into a bigger portion, right? That was today's lunch plan. Swedish Meatloaf over Garlic Butter Egg Noodles. Yep, it's as good as it looks, maybe even better!
And aside from the noodles, it was a one pot wonder. I sautéd the onions for the meat mixture in a big electric skillet, combined all of the meat ingredients (beef, pork, onions, bread, milk, eggs, allspice, nutmeg, Worcestershire, salt, and pepper), formed into meatloaf patties, fried in the skillet, and then I made the gravy in the drippings using flour, beef stock and heavy cream. I tossed the egg noodles with garlic butter and some fresh parsley.
And to go with it, sometimes all you need is a simple salad with a homemade Honey Dijon Vinaigrette...
...and Parmesan "Everything Bagel" Popovers were another perfect accompaniment! The house smelled amazing as these beauties were baking.
For a sweet treat, I whipped up quick and easy Cookie Pudding Cups. The secret - boxed pudding mix! 5 minutes and done! And in case you can't tell, there is a second cookie buried in the pudding.
And this was only lunch.....about to start working on dinner! More later...
