We're Back!

All vacations must come to an end but after touring Alaska, Canada, and Seattle, I come home with many memories plus lots of new food inspirations. Pacific seafood is outrageously good, not to take anything away from our East Coast or Chesapeake Bay seafood. Over the next few weeks, I will be attempting to recreate some of the best dishes from the trip, as well as putting my own spin on some other recipes.


Lunch today was inspired by the beautiful pacific shrimp, although I used local shrimp for my Garlic Shrimp Burgers with Old "Bayonnaise", emphasis on the GARLIC!

I started by sautéing two heads of minced garlic in a stick of butter. (I could have stopped there and would have been just as happy!) I only cooked it for a few minutes and then added some smoked paprika, cayenne, Old Bay (seafood seasoning), salt, pepper, and set aside in a bowl while I prepared the shrimp.

I pulsed the peeled/deveined shrimp in a food processor, added to the butter/garlic mixture, and formed into patties. Then I put them back into the same skillet that I cooked the garlic and cooked the patties for about five to seven minutes per side.

The sauce is simply mayonnaise, Old Bay hot sauce, Old Bay seasoning, salt, pepper, and a teaspoon of apple cider vinegar. The best part about this dish is that it is 100% CARB-FREE! I served it on a bed of greens, but if you are up for some carbs, you can feel free to slather the sauce on your favorite bun or bread and make a great sandwich out of it!

Now to start working on dinner....no seafood tonight but some great new recipes on the way!
